I'll give you four reasons I wouldn't be a Catholic:
Number one reason is that it purports to be the only true Church of Chirst.
1. The archaelogical evidence for that period shows that all the first Churches practiced the same rites the Catholic Church practices today.
2. The historical evidence of that period is written by Bishops and Priests who hold held to all the same teachings of the Catholic Church.
Mark 16:16
He that believeth and is baptized shall be saved; but he that believeth not shall be damned.
If you believe and are baptized, you will be saved.
But if you do not believe and are baptized, you will be condemned.
Granted, that verse is about Baptism explicitly. But Baptism is a Sacrament and therefore it is about all Sacraments implicitly. 1 Cor 11: 27-29 is explicitly about the Eucharist. Let's see what it says:
1 Corinthians 11:27-29

27 Wherefore whosoever shall eat this bread, and drink this cup of the Lord, unworthily, shall be guilty of the body and blood of the Lord.
28 But let a man examine himself, and so let him eat of that bread, and drink of that cup.
29 For he that eateth and drinketh unworthily, eateth and drinketh damnation to himself, not discerning the Lord's body.
Therefore, if you don't believe in the Transubstantiation of the Bread and Wine into the Body and Blood of our Lord, and you consume the Eucharist, you have eaten and drunken damnation unto yourself.
Galatians 1:8
But though we, or an angel from heaven, preach any other gospel unto you than that which we have preached unto you, let him be accursed.
Where do you draw the line? Or do you draw any line at all?
Ephesians 4:14

2. To us, the Priests are:
2 Corinthians 5:20
Now then we are ambassadors for Christ, as though God did beseech you by us: we pray you in Christ's stead, be ye reconciled to God.
We, therefore, treat our Pastors as we would Christ. We don't give them shabby things to wear. We give them the garb that befits the King of Kings.
2. We call them "holy" because they are set apart, consecrated to God.
3. We consider our "Bishops" to be "holy Fathers" in a special way, because the Holy Spirit has elected them to rule over the Christ's Church.
4. The Pope is the Bishop of Rome and holds that title as well. But he is the most famous because he is the sign of the Church.
